My husband has been on a salad kick lately. And while I love a good salad, I decided that doing chipotle salads would be a nice change. So I've tried a few different recipes to do this at home. And thanks to Pinterest I've found two that I love! So I'm sharing them here. If you try them, let me know how it turns out!
First up is the chicken, rice and beans! This was really easy and you can adjust the seasonings to your liking. This was tasty and made enough for us to each have a salad bowl (no tortillas over here) and enough to take for lunch the following day plus one additional serving! Which was perfect for leftover night!
The chicken was made earlier this week. And today I put my dear, sweet, wonderful crock pot to good use (I really love this thing!). Making this delicious and spicy Barbacoa. Now I have to confess I've never actually eaten this at Chipotle. So I'm not sure what its supposed to taste like. But its tasty!
Now the beef has cooked all day and it is delicious! It has quite the kick though! When I make it again I'll probably only add 2 or 2.5 chipotle peppers. Husband likes the spice but I think it was a little bit too much!
This had been a really nice week. This weekend I'm going a Maryland football game. We'll be doing the whole tailgating thing. Which is a first for me. The group we're meeting up with said they get to the stadium around 10am. The game starts at 4 so I'm a little confused as to why they go so early. I mean what do they do for 6 hours? Guess I'll find out tomorrow - though if its anything like TSU homecoming lots of eating and drinking. I'm looking forward to it!
